Brasserie Astrid is looking for an experienced and engaged sous chef to join our kitchen team. As sous chef, you will be the right hand of the head chef and play a central role in raising quality, efficiency, and work atmosphere in a modern brasserie where classic dishes meet international influences. The role involves operational responsibility for service, personnel management, training, and menu development, as well as ensuring that kitchen routines are followed and developed.

Job Responsibilities – Sous Chef
  • Support the head chef in daily operations, planning, and follow-up of kitchen activities.
  • Lead and coach the kitchen team during shifts, distribute tasks, and ensure the right pace and quality.
  • Responsible for maintaining standards for taste, plating, and portioning, as well as performing quality controls.
  • Actively participate in production at stations during high pressure and act as a problem solver during service.
  • Plan and conduct internal training, tastings, and introductions for new employees.
  • Follow and develop hygiene routines and safety regulations, including HACCP monitoring.
  • Participate in delivery reception, inventory, and ordering planning in collaboration with the head chef.
  • Contribute to menu development, recipe documentation, and cost calculations to optimize quality and profitability.
  • Ensure handling of special diets and allergies in dialogue with service and kitchen staff.
Qualifications and Experience
  • At least 3–4 years of experience in a professional kitchen, with several years in a leadership role or responsible for a station.
  • Good technique in hot and cold kitchens, and experience working structured under high tempo.
  • Experience in personnel management, scheduling, and coaching employees towards common goals.
  • Knowledge of cost control, portion calculation, and inventory management is an advantage.
  • Documented familiarity with HACCP or similar hygiene and safety routines.
  • Good communication skills in Swedish, both spoken and written; English is an advantage.
  • Flexibility to work evenings, weekends, and as needed during high season.
