Head Chef for two restaurants – Barleys

About the role
We are looking for a committed and driven Head Chef who wants to take overall responsibility for the kitchen operations at our two restaurants, Barleys Kville and Barleys Skanstorget, and contribute to the development of our upcoming restaurant concept.
The role involves responsibility for quality, economy, personnel, and development, with a focus on long-term leadership and stable operations. Our concepts include weekend breakfast (Breakfast Society), lunch, and a modern gastropub concept with the ambition to serve Sweden's best hamburgers.
Responsibilities
As Head Chef, you will be responsible for:
- Leading, motivating, and developing the kitchen teams at both restaurants.
- Training and coaching staff towards future leadership roles.
- Overseeing daily operations, quality, hygiene, and food safety.
- Ensuring that routines, cleaning, and self-control programs are followed.
- Creating seasonal menus and ensuring correct recipe documentation.
- Managing inventory, purchasing, and supplier contacts.
- Actively working with cost control and profitability.
Economic targets:
- Food cost: 30% (28 + 2)
- Kitchen labor: 25%
- Service cost: 7%
Quality & Development
- Ensuring consistent quality regarding taste, presentation, and portion sizes.
- Working closely with management in the development of new menus and future restaurant concepts.
Qualifications
We are looking for someone who:
- Has documented experience as a Head Chef or in a leading kitchen role.
- Is a confident leader with a good ability to develop people.
- Has a good understanding of economics and experience in cost management.
- Works in a structured and solution-oriented manner.
- Has a strong interest in quality, ingredients, and gastronomy.
