ABOUT THE ROLE
We are currently looking for an assistant kitchen manager for the cold kitchen who wants to help develop our classic cold kitchen. For the right person, there will also be good opportunities to grow and take over as the kitchen manager for the cold kitchen in the long run. We are looking for someone who is genuinely interested in food, feels comfortable and at home in a cold kitchen, and is driven to lead and develop a team.
In the cold kitchen, cold appetizers, canapés, and finger foods are prepared for our banquet hall, as well as Afternoon tea for Cadierbaren. Classic buffets and breakfast buffets for Verandan are also created here.
As the assistant kitchen manager for the cold kitchen, your main responsibilities will include:
- Being the main responsible for production within the cold kitchen, staff, operations, and service in the kitchen when the cold kitchen manager is not present.
- Acting as a deputy for the cold kitchen manager and ensuring that the kitchen operates efficiently and meets our high standards.
- Collaborating with and leading a team consisting of 11 cold kitchen staff and chefs, as well as 2 sous chefs.
Your daily tasks will also include:
- Organizing, distributing, leading, and following up on work in the cold kitchen, as well as actively participating in daily production.
- Ensuring that the kitchen's high standards are adhered to.
- Participating in menu planning, menu setup, and vision work for the future development of the kitchen.
- Ensuring that orders stay within established financial frameworks and agreements.
- Regularly informing and communicating with kitchen staff and other departments in the hotel.
- Ensuring that cleaning routines, HACCP, and other hygiene regulations are followed.
For the right person, this will be both a developing, rewarding, and above all, fun experience. Since our kitchen consists of many different departments, there are good opportunities for you to both develop and grow. Working hours vary but are primarily scheduled for daytime, although evening and weekend work may also occur.
WE ARE LOOKING FOR SOMEONE WHO HAS:
- At least 8 years of experience working in a professional kitchen, of which at least 3 years in a cold kitchen.
- High ambitions and a desire to develop within the department.
- The ability to work in a structured manner and maintain high quality even under time pressure.
- Previous experience in leading and motivating a team and feeling comfortable making decisions related to daily operations.
- Good communication and collaboration skills with other departments.
- Knowledge of HACCP and other relevant food laws and regulations.
- Fluency in both spoken and written Swedish and English.
- Documented education in the profession is an advantage.
