Department of Molecular Sciences
SLU is seeking an independent and highly motivated Staff Scientist for a position focused on the processing methods and physico-chemical characterization of plant-based foods. The successful candidate will work at the Department of Molecular Sciences, SLU and collaborate with the interdisciplinary research center PAN Sweden, PAN Sweden (https://www.oru.se/strategiska-satsningar/mat-och-halsa/pan-sweden). The project aims to elucidate the connections between processing conditions, the microstructure of the food ingredients, in relation to sensory properties and health impacts.
About the position
The Staff Scientist will develop and implement processing techniques, including fermentation, and analyze the effect on food microstructures as well as other physico-chemical properties. The research will examine how microstructure and texture build up during processing and break down during consumption. Evaluations will span both micro/micro level using various microscopic techniques such as confocal laser scanning microscopy, light microscopes, and ultra-fine structure level using scanning electron microscopy (SEM). Additionally, the role involves assessing how enzymes degrade structures and ingredients and the effects of processing on bioaccessibility and bioavailability.
Your profile
The applicant should have a solid background in processing methods and structural characterization of materials, such as proteins, starches, and dietary fibers. In addition, knowledge in mechanical and rheological characterization is meritorious. Knowledge of food technology (gel formation, emulsification, 3-D printing, fermentation, etc.) is desirable. Knowledge of the structural properties of foods and techniques for studying them is central to the job. Proficiency in microscopy (light, confocal, electron) and rheology, along with an understanding of human nutrition and physiology, will be advantageous. Personal qualities such as a sense of responsibility and the ability to independently perform tasks as part of a research team will be valued. Valuable experiences and skills include experimental laboratory work, scientific writing skills, and the ability to work in interdisciplinary projects. Previous experience in the food industry is advantageous.
Competence
PhD in food science, physical chemistry, colloid chemistry, soft materials, biophysics, or related field. Proven proficiency in both spoken and written scientific English is required. Experience in supervising students is an asset.
Staff Scientist positions are career-developing positions for younger researchers; we are primarily looking for candidates who have a PhD that is no older than 3 years.
