Head Chef / Kitchen Manager at Lydinge Resort

Do you want to take full responsibility for the kitchen at a growing resort where quality, leadership, and development are in focus? At Lydinge Resort, you will play a key role in ensuring operations and driving development.

About the position

As Head Chef/Kitchen Manager, you will have overall responsibility for the entire kitchen operation – from daily operations to long-term development. You will lead the kitchen from start to finish and be fully responsible for food quality, staff, and key performance indicators.

You are a present leader who is hands-on, leads by example, and contributes to a professional and positive work environment. Administrative work is allocated to one day per week. All working hours are included in the kitchen's key performance indicators.

Areas of responsibility

Leadership & Staff

· Full personnel responsibility for kitchen staff

· Ensure correct staffing according to set key performance indicators

· Continuously introduce, train, and coach staff

· Establish and follow up routines for high and consistent quality

Management Team

· Part of the resort's management team

· Ensure that the kitchen operates in line with the overall strategy

· Contribute to the resort's long-term development

Food, Finance & Quality

· Responsible for menus and offerings in line with Lydinge's concept

· Very good knowledge in calculating dish costs

· Solid experience in working with and maintaining margins

· Ensure high and consistent food quality

Food Safety & Hygiene

· Responsible for food safety and hygiene routines

· Ensure proper stock rotation in fridges and freezers to minimize waste

Goals, Follow-up & Strategy

· Work closely with the CEO towards common goals and key performance indicators

· Monthly follow-up and reporting

· Clear implementation of strategies and routines

Employment Type

Full-time, permanent position with an initial probationary period.
