Brasserie Astrid is looking for an experienced and committed sous chef to join our kitchen team. As a sous chef, you will be the right hand of the head chef and play a central role in elevating quality, efficiency, and work climate in a modern brasserie where classic dishes meet international influences. The role involves operational responsibility in service, staff management, training, and menu development, as well as ensuring that the kitchen's routines are followed and developed.

Responsibilities – Sous Chef
  • Support the head chef in daily operations, planning, and follow-up of the kitchen's activities.

  • Lead and coach the kitchen team during shifts, distribute work, and ensure the right pace and quality.

  • Ensure that standards for taste, presentation, and portioning are maintained and perform quality controls.

  • Actively participate in production at stations during high load and function as a problem solver during service.

  • Plan and conduct internal training, tastings, and onboarding for new employees.

  • Follow and develop hygiene routines and safety regulations, including HACCP monitoring.

  • Participate in delivery reception, inventory, and ordering planning in collaboration with the head chef.

  • Contribute to menu development, recipe documentation, and cost calculations to optimize quality and profitability.

  • Ensure the handling of special diets and allergies in dialogue with service and kitchen staff.

Qualifications and Experience
  • At least 3–4 years of experience in a professional kitchen, several of which should be in a leadership role or as the person responsible for a station.

  • Good technique in hot and cold kitchens, as well as experience working in a structured manner under high pressure.

  • Experience in staff management, scheduling, and coaching employees towards common goals.

  • Knowledge of cost control, portion calculation, and inventory management is a plus.

  • Documented experience with HACCP or similar hygiene and safety routines.

  • Good communication skills in Swedish, both spoken and written; English is a plus.

  • Flexibility to work evenings, weekends, and as needed during peak season.
