About the restaurants at The Winery Hotel

At Terreno Kitchen, lunch and dinner are served, focusing on the flavors of the wine, and the food is created accordingly. Gallo Nero is an Italian gastro wine bar with a menu inspired by the delicious Tuscan cuisine. In the lobby is the Winemakers Bar, from which wine tastings and guided tours start, and on the roof is the Winery Rooftop Bar, offering a beautiful view over the rooftops.

About the role

As Sous Chef, you have a key role in the daily operations of the kitchen. The role is operational and varied, where you manage your shift according to a 3-week rotating schedule:

  • Week 1: Responsible for mise en place

  • Week 2: Lunch operations, where you also create the lunch menu each week together with colleagues you work with

  • Week 3: Evening service and responsibility for evening operations

Responsibilities
  • Operational responsibility for the kitchen during your shift

  • Supervision of approximately 3-5 people in the kitchen, including dishwashing

  • Ensure structure, preparation, and high quality in delivery

  • Collaboration with other sous chefs, head chefs, cooks, and pastry chefs

  • Active participation in menu planning, especially lunch menus

We are looking for someone with good culinary knowledge who is ready to take the next step in their career. The team consists of ambitious and driven employees, and we hope you are:

  • A natural team player who leads through presence and clarity

Experience & qualifications

Mandatory:

  • At least 5 years of experience in a kitchen

  • Good knowledge of Swedish or English

  • Experience in menu writing

Meritorious:

  • Experience in purchasing and/or kitchen economics

  • Previous work in the hotel industry
