About the Position

Restaurang Malakeh is seeking an experienced chef with documented specialist competence in authentic Persian cuisine, with a special focus on traditional dishes from Northern Iran.

The role requires in-depth knowledge of Persian ingredients, spices, flavor profiles, and traditional cooking methods. The restaurant's concept is built on genuine Persian food culture, placing particular emphasis on regional dishes from Gilan, Mazandaran, and Golestan.

Responsibilities

• Prepare authentic Persian dishes according to traditional recipes.
• Take responsibility for dishes focusing on the food culture of Northern Iran.
• Prepare and cook stews, grilled dishes, rice dishes, appetizers, and traditional sauces.
• Ensure taste, quality, and presentation.
• Contribute to menu development.
• Train other kitchen staff in Persian cooking techniques.
• Work in accordance with Swedish hygiene and food safety regulations.

Qualifications

We are looking for someone who has:

• At least 5 years of documented experience as a chef in a Persian restaurant.
• Documented experience in authentic Persian cooking.
• Specialized knowledge of Northern Iranian cuisine.
• Experience with dishes such as Mirza Ghasemi, Baghali Ghatogh, Torshe Tareh, Anarbij, Kebab Torsh, Morgh-e Torsh, Sir Ghalieh, and Fesenjan.
• Good knowledge of traditional Persian rice preparation.
• Experience with Persian grilling techniques.
• Ability to work independently and under high pressure.

Preferred Qualifications

• Knowledge of Persian/Farsi.
• Experience in menu development.
• Experience in training other kitchen staff.
